In developed countries, obesity is inversely associated with socio-professional categories, as are practices to control body weight. There is much literature to support this claim, although it does not address in detail the question of the methods used to diet. This article draws on the results of a qualitative investigation using observation and interviews with the participants of a food education programme in the north of France, where obesity is most prevalent. We will show that the dominant definition of dieting, including the one used in statistics surveys, remains somewhat far from actual practices.
